What? It's October first already? How did THAT happen? I feel like it's still August! Of course, I also feel like I;m still 21, but that's another story altogether! At any rate, it's true, October is upon us, and that means it's time to check in on which recipes were the most popular in the month of September at vegetarian.about.com!

Easy Black Bean Burgers

These super easy black bean burgers are often at the top of my best of and most popular lists, and wth good reason. You might look at the ingredients list and think there's no way those will turn into good burgers, but I promise, they do, and yes, making bean burgers really is that easy. 


Creamy Curried Carrot and Coconut Soup

I actually just prepared this for dinner for myself just the other night and had the leftovers over some quick plain couscous for lunch at work the next day. I've made this soup so often (and it's so easy) that I don't even look at the recipe any more: it's just carrots, curry powder, and coconut milk - and it's unbelievably delicious. 


Easy Rice and Bean Burrito

I'm not sure why this burrito has been climbing in popularity in September, but as a long time burrito afficionado, I get the feeling that burritos in general are becoming more popular,and this one is a simple way to make one at home. If you've got leftover rice and a can of black beans, here's how to have a delicious vegan burrito in less than ten minutes. Add cheese and sour cream if you want, or keep it vegan and add avocado slices.

Oil-free Almost Fat-free Hummus

And finally, we have this nearly fat-free hummus recipe made without tahini as one of the most popular recipes of September. It comes from the vegan firefighters behind the popular vegan Engine 2 Diet, and my readers have given it 4 out of 5 stars in reviews. It has extra lemon juice and a bit of water in place of both the tahini and the oil of more traditional hummus recipes.
