Although I'm always a bit sad to see the end of summer, it is a great consolation that September is the start of mushroom season, and in Tuscany, specifically porcini mushrooms, with their strong, heady, earthy scent. Though it can be difficult to find fresh porcini in many places, dried versions make an acceptable substitute.
