A Simple Sicilian-Style Pasta
Pasta alla Norma is a classic dish from the Sicilian city of Catania, made with a short tube-shaped pasta tossed in a simple tomato sauce and topped with thick slices of fried eggplant, coarsely grated ricotta salata cheese and fresh basil. The eggplants and tomatoes (and other produce) from this region have incredible flavor, thanks to the volcanic soil enriched by the still-active volcano Mount Etna.

Pasta alla Norma was allegedly created by a Catanese chef in tribute to the opera Norma by 19th-century local composer Vincenzo Bellini.
