Vegetarian Indian spinach and Chard
I was plum out of tofu (and paneer) and really wanted to make saag paneer, so instead, I made a paneer-free Indian cooked spinach and added in some extra healthy greens - Swiss chard - because who doesn't love a little extra chard now and then? Enjoy this not-so-traditional version (to my knowledge, at least) of Indian spinach and chard.

This Authentic Italian Ricotta Balls Recipe Comes from 1930
This authentic Italian recipe is called "Polpette di ricotta" in Italian and comes from The Duke's Table, a vegetarian Italian cookbook first published in 1930 in Sicily by Enrico Alliata, The Duke of Salaparuta (reprinted with permission, of course). The Duke (or, more likely, his translator) calls these "ricotta balls", but I think they're more accurately called gnocchi. At least they're quite similar to potato gnocchi.
