Stuffed Vegetables -- An Easy and Filling Weeknight Meal

Here are two hearty and comforting meals which have vegetables and meat in one toothsome dish -- add some crusty Italian bread and a salad and you've got dinner! You can substitute the type of ground meat in either dish, and substitute (or omit) the cheeses as desired.
