Pumpkin Risotto and Pumpkin Jam

Are you tired of pumpkin yet? But pumpkin season has just begun! This week we have two more Italian-style pumpkin recipes: pumpkin risotto, a Northern Italy classic, and pumpkin jam, which can be spread on toast or eaten with cheese.

Pumpkin Risotto (Risotto di zucca gialla)  

This warm and comforting dish can easily be made vegetarian by using vegetable broth in place of chicken broth, or heartier by topping the finished dish with crisp fried pancetta or bacon.
