Carnival is here!
This year, the main part of the Carnevale festival in Venice is taking place from February 7 to 17, and besides parades, moats, and costumes, Italians celebrate Carnevale with all sorts of indulgent desserts, particularly fried sweets such as doughnuts, fritters, or these crisp strips of fried dough, dusted with powdered sugar. They go by many names, but in Tuscany they're called cenci ("rags").
A recipe for "Cenci" or "Chiacchiere"

These crisp, puffy strips of fried dough sprinkled with powdered sugar are popular throughout Italy during Carnevale time.
