A Hearty Winter-Vegetable Minestrone

Carnevale has officially ended, and with it the license to indulge in deep-fried, sugary treats. It's time to make up for all that excess, and what better way than a nourishing, meat-free minestrone made with winter vegetables?

A soup made an assortment of winter bounty, including lacinato kale, Jerusalem artichokes, and celery root -- plus chestnuts and black-eyed peas. Serve it topped with a sprinkle of freshly grated parmesan cheese or a drizzle of extra-virgin olive oil.
