10-Minute Spaghetti with Browned Butter and Ricotta Salata

In the time it takes to boil a pot of pasta, you can have a toothsome, satisfying meal on the table. You can make this super-simple spaghetti dish with ricotta salata, a salted and aged version of ricotta cheese, with cacioricotta, a similar cheese from the south of Italy, or with mizithra, another aged sheep's-whey cheese from Greece. All three have a similar taste and texture.
