Japanese Kabocha Squash for Thanksgiving? Why Not!

Japanese kabocha squash is a beautiful, sweet, full-flavored squash that is perfect for Thanksgiving! Try kabocha roasted with a dusting of paprika, for a more traditional dish. Or, try kabocha "kinpira" style, sauteed with soy sauce and mirin to add an Asian twist. Also new on the blog this week is a great, easy meal of pan fried udon noodles "yaki udon".
