Fall is the Time for a Great Roast

There is something about the feel of Fall in the air that puts me in the mood for a great roast. Beef, pork, or lamb it just needs to be slow roasted over a real fire with vegetables, rich flavors, and maybe, just maybe, a nice bottle of wine.
