Seems like every year, pumpkin-mania gets a little bit more feverish, and it's grown way beyond pumpkin spice lattes. I don't jump on every food trend bandwagon, but I do love me some pumpkin, and I'm known to make pumpkin cookies and pumpkin cake year round. True story. If you love pumpkin as much as I do, you'll be thanking me for this week's newsletter. Try out some of these amazing (and EASY!) pumpkin recipes and enjoy! 

It really is a great pumpkin

It's a testament to the mighty orange squash that it actually goes well with coffee. To it's credit, pumpkin goes well with so many foods. While we all love it in pies, pumpkin also appears in cookies, muffins, breads, cakes and soups. In Thailand, it's cooked with sugar syrup and stuffed with an egg custard for a sweet dessert or snack. So, without further adieu, in celebration of everyone's favorite squash (and, well, Halloween), here are the best pumpkin recipes ever.

In our eager fanfare for the mighty orange king of squash, let's not forget some lesser seasonal squashes. Acorn, for example, is a favorite for it's small size and ease of preparation. Chop, drizzle with olive oil, sprinkle with salt and pepper (and nutritional yeast, of course!) and you've got yourself a meal. And who doesn't love the natural sweetness of butternut squash? It's highly underrated, in my opinion. Here's some other favorite squash recipes if you want to buck the pumpkin trend:

These pumpkin cookies are truly magical. Don't believe me? Try them out then see if you don't just agree. What makes them so magical?
