It’s my firm belief that trying new foods, having fun exploring new recipes and awakening your palette to new flavors and textures is one of the best parts of being a vegetarian (or vegan)!

Easy "beef" enchiladas
Use a package of store-bought vegetarian ground beef substitute to make these delicious vegetarian enchiladas. The process is quite simple: prepare a spicy enchilada sauce (or skimp on this step and just open a can!), heat the veggie beef with some tomatoes and onions, and wrap up your meatless enchiladas and smother them with cheese.

Quinoa "fried rice"
Got leftover quinoa? Use it to make this vegetarian, vegan and gluten-free fried "rice" recipe. Just like regular fried rice, this quinoa "fried rice" recipe uses soy sauce and sesame oil along with plenty of vegetables. Add in a bit of tofu or scrambled egg if you'd like a bit of a heartier meal.

Pumpkin Cake Mix Cheater's Cake
Vegan cake mix pumpkin cake using canned pumpkin and store-bought cake mix. I'm tempted to call this a dump cake, since it's so quick and easy, but you do have to mix the ingredients before you dump them, so it's not technically a dump cake - I think it's better called a "cheater's cake", but who's judging?
