From Jolinda Hackett, your Guide to Vegetarian Food

I'm betting that you haven't tried all three of these foods yet! If you have, well, there's no prize, but if you've already tried these three new foods, have you already tried the vegetarian hundred? (Answer: No you have not, since one of them does not exist yet)

Teff

What it is: A small-sized whole grain food
Why you should try it: It's a cheaper alternative to quinoa and it's rich in calcium - perfect for vegetarians and vegans
Why you haven't tried it yet: That's a good question - you should! Teff has long been available at health food stores and has only recently started to gain popularity, following in the tailwinds of quinoa.

Learn more about teff here.

Quinoa flakes

What it is: A rolled version of quinoa, similar to rolled oats.
Why you should try it: High in protein, quick cooking, what's not to love?
Why you haven't tried it yet: Quinoa flakes aren't quite readily available yet. You may have to find them at a health food store instead of your regular supermarket. They'll probably only continue to grow in popularity though, so check back again.

Hemp seeds

What it is: Hemp seeds!

Why you should try it: Rich in protein, Vitamin E and essential fatty acids, hemp seeds are one of the best superfoods for vegetarians and vegans

Why you haven't tried it yet: Hemp seeds are definitely not found in most supermarkets, and are not yet grown in the United States in large quantities.

Italian Food

Quick/Easy Recipes

Le Basi

Classic Recipes

From Danette St. Onge, your Guide to Italian Food

I've posted three new recipes this week, all from the South and all quite simple to make. One you can have on the table in less than 20 minutes, while the others can easily be made ahead and reheated just before serving.

From Sicily, we have Stuffed Eggplants (Melanzane a barchetta).

From Apulia, a specialty from the Salento peninsula, the "heel" of Italy's "boot"Pitta di patate, a potato and tomato casserole.

And finally, a really quick-and-easy side dish: Sauteed Spinach with Toasted Pine Nuts, that would pair well either of the above.

Sicilian-Style Stuffed Eggplants (Melanzane a barchetta)

A hearty, easy-to-make dish of tender baked eggplants stuffed with a ground beef, cheese, and eggplant filling flavored with fresh basil. About an hour, start to finish, including 30 minutes of baking time. Get the recipe.

Pugliese Potato-Vegetable Casserole (Pitta di patate)

A hearty, easy-to-make dish of tender baked eggplants stuffed with a ground beef, cheese, and eggplant filling flavored with fresh basil. About an hour, start to finish, including 30 minutes of baking time. Get the recipe.

Sauteed Spinach with Toasted Pine Nuts (Spinaci saltati con pinoli)

A super-quick, easy, and nutritious side dish that pairs well with any meaty main. I've included recipes for two optional toppings as well: a Parmesan-toasted breadcrumb topping or crispy prosciutto. Get the recipes.

About Today: Happy Hindu New Year!

If you can't see this email, click here

About

Today's the day many Hindus usher in the new year and welcome the spring season! But the festivities are more complicated than you might think. Hindus in various states of India actually honor the new year in their own unique ways (and not all of the holidays even fall on today's date). Let's take a closer look at how they celebrate and then learn why even the Hindu belief system lacks the unity of most world religions.

For daily information and inspiration, follow About.com Religion & Spirituality on Facebook and Twitter.

Happy Gudi Padwa, Ugadi, and More!
Whether the Hindus of Kashmir call it Navreh or the Marathas call it Gudi Padwa, the Hindu New Year takes place around the start of the month of Chaitra, which says hello to spring. From cleaning and decorating their homes to wearing new clothes and baking tasty sweets, learn all of the ways Hindus start anew.

And Happy Vasanta Navaratri!
Today also marks the start of Vasanta Navaratri, also known as the nine holy nights of spring. Now through April 8, Hindus fast and worship Durga (the Mother Goddess).

Hinduism for Beginners
While Hinduism may lack a unified system of beliefs and ideas, the religion does believe in idol worship, reincarnation, and karma among other concepts. Hindus also emphasize non-violence, truthfulness, purity and generosity. Interested in learning more about the world's oldest extant religion? Start with these Hinduism basics for beginners.

Chinese Steak with Peppers
A reader gives this recipe five out of five stars, saying: "I've been looking for a steak recipe for a long time and when I tried this one, this truly had the flavor I was looking for."

Make Your Own XO Sauce
Named after an expensive cognac, it takes only a small amount of this spicy sauce to add flavor to everything from tofu to noodles. Now you can make your own at home.

Easy Oyster Sauce Chicken
Dark soy sauce lends its full-bodied flavor to the sauce for this dish.

More Shanghai Vegetable Rice
Planning to cook rice and bok choy for dinner? Why not combine them? Bok choy and softened Chinese mushrooms are briefly stir-fried with seasonings, then added to the rice in the final stages of cooking, allowing the rice to absorb their flavors.
