Who doesn't love a baked pasta casserole? It's filling comfort food at it's finest, and a great way to use up leftover pasta.

Macaroni and "hamburger" casserole

Use veggie burgers to make a vegetarian "hamburger" and macaroni casserole that kids will devour. With pasta, cheese soup, tomatoes and veggie burgers, this isn't the most nourishing of meals, but it is easy, cheap, quick and tasty and if your kids like hamburger casserole, they'll like this meatless version, too.

Basic vegetarian baked pasta
Made from just five ingredients, this is a basic vegetarian baked pasta. It's made with pasta, tomato sauce, and ricotta and mozzarella cheese. This is the recipe to use if you want to add in extra ingredients - whatever you have on hand. Sneak in some sauteed vegetables, use an artisan cheese in place of the mozzarella on top or snip in fresh herbs from your garden.

Easy baked penne with Swiss chard
Pasta casseroles aren't just for kids - this one with Swiss chard, ricotta and white wine with a seasoned breadcrumb topping is definitely all grown up! I'm always trying to find new ways to eat my greens, so I think next time I make this recipe, I'm going to double the amount of chard the recipe calls for, and I'm also planning on trying it with lacinato kale, too.
