Sunday is Father's Day. Sadly, I lost my father several years ago, and we lost my father-in-law just a couple of years ago. There are still fathers in my life. My loving husband is the father to my daughter. Plus, I have several priests at my church, and many others who have made a big difference in my life. So, happy Father's Day to all of you!

My Father Was a Norwegian-American. Sadly, both of his parents were gone before I was one year old, so I never got to meet them. Basically, the only thing my dad had to pass on of his Norwegian heritage was food. He would make Lefsa for Mother and me when we had leftover mashed potatoes.

Basic Crepe Recipe

Okay, my husband doesn't exactly like crepes as part of a dessert. One of his favorite treats is when I take homemade crepes and fill them with ricotta. I then roll them up, cover them with tomato sauce and cheese. Next they are baked. Instead of making manicotti with pasta shells, I make them with crepes. This is how his great Aunt Edith used to make them.
