From Jolinda Hackett, your Guide to Vegetarian Food

I'm always trying new things in my kitchen. Are you? Whether it's something as simple as a new sauce or salad dressing, a new spice or something completely new, different and unexpected, I believe that new vegetarians and vegans should be having FUN exploring new foods! Here's a few of the recipes which are new to About.com this month.

Don't forget you can always browse through all the vegetarian recipes here, or vegan recipes here, or check out what's new here and follow me on Twitter here. Have a great week, everyone!

Italian Parmesan and Barley Soup

I've always loved barley and barley soup recipes, but this Italian Parmesan soup recipe just might be my new favorite way to make barley. It's made with Parmesan rinds (check the refrigerated cheese section at Whole Foods or just use your own) which melt into a succulent and smooth flavor perfectly soaked up by the chewy barley.

Black Bean and Zucchini Soup

This vegetarian black bean and zucchini soup is deliciously spicy, but not overpoweringly so. The cheese on top tames the kick a bit, and you could add a dollop of sour cream to counteract the spiciness too. All that fabulous spicy flavor comes from the addition of a fresh jalapeno pepper. Along with a fresh jalapeno, there's plenty of chili powder, cumin and a dash of cayenne pepper to bring up the heat.

Perfect Vegan Peanut Butter Cookies

Classic peanut butter cookies - veganized. No eggs, no butter, no dairy - just pure vegan peanut butter cookie goodness. Who doesn't love peanut butter cookies?

More new recipes to try

After more than two decades as a vegetarian, I still love trying new things and discovering new foods and flavors. I can spent hours browsing the aisles of ethnic grocers and boutique markets, just smelling, looking, and, of course, ultimately, tasting! I hope you enjoy trying new foods as much as I do. It’s my firm belief that trying new foods, having fun exploring new recipes and awakening your palette to new flavors and textures is one of the best parts of being a vegetarian! Here's more of the latest new recipes over at About.com.
