Is millet the new quinoa? At about a quarter of the price, it sure does make a great substitute! While millet contains less protein than quinoa, it's more affordable, just as versatile, and is vegetarian, vegan and gluten-free. Millet may not be as common as barley or as trendy as quinoa (yet!), but it definitely deserves a chance to earn a spot in your cooking repertoire as a healthy, shelf-stable and affordable staple grain.

Introduction to millet
Millet cooks slightly differently than other whole grains, in my experience, in that it can turn into a mushy porridge if overcooked. Of course, if you're cooking it for a breakfast porridge dish, then that's not a bad thing! If you're new to cooking with millet, here's what you need to know.

Baked millet patties
This recipe is for a basic millet patty, so you may want to spice them up a bit. Topping them off with salsa? Add Mexican spices such as chili powder and cumin. Using them for veggie burgers? Add some "meatier" spices such as paprika or a barbecue rub.

Cheesy millet risotto with broccoli
The recipe calls for garlic powder, since that's the way I made it, but you could also heat up some fresh garlic and onions in olive oil for extra flavor, it you'd prefer. I can't wait to try this recipe again, but this time with spinach or Swiss chard in place of the kale.
