Chickpea and peanut soup recipe

Isn't it just unbelievably beautiful? If you've never tried peanut soup before, please consider this my official invitation for you to give it a try. Yes, it may seem a bit odd if you've never tried it, but once you give it that first slurp, you'll be thanking me. And, with both peanuts and chickpeas, it's got a nice protein boost for us vegetarians and vegans. Vegan and gluten-free.


Lemon arugula pesto (with or without gnocchi)
When it comes to pesto, I'm no purist. I like experimenting with different types of nuts, herbs and, I often vary the amount of liquid - sometimes I'll make a thinner pesto sauce, and sometimes it's thicker, like a dip. This homemade vegan pesto combines peppery arugula with walnuts or pine nuts for an almost traditional pesto sauce. Vegan and gluten-free.

Simple Greek barley salad tecipe
A simple whole grain salad or pilaf made with barley, tomatoes, bell peppers and feta cheese in a simple dressing. Omit the cheese to keep it vegan and dairy-free, or, replace the feta with a baked or seasoned tofu instead.
