| Lemon arugula pesto (with or without gnocchi) When it comes to pesto, I'm no purist. I like experimenting with different types of nuts, herbs and, I often vary the amount of liquid - sometimes I'll make a thinner pesto sauce, and sometimes it's thicker, like a dip. This homemade vegan pesto combines peppery arugula with walnuts or pine nuts for an almost traditional pesto sauce. Vegan and gluten-free.
| Simple Greek barley salad tecipe A simple whole grain salad or pilaf made with barley, tomatoes, bell peppers and feta cheese in a simple dressing. Omit the cheese to keep it vegan and dairy-free, or, replace the feta with a baked or seasoned tofu instead.
