Vegetarian Holidays

According to a 1999 study published in the American Journal of Clinical Nutrition, choosing soup before a meal will naturally help you consume fewer calories overall, and can lead to dramatic weight loss, and more importantly, soup can help in keeping it off. Choose broth-based soups (rather than creamy soups) to help with weight loss. Here's a few nourishing fat-free soups to try.

Spicy Mango Ginger Soup
It's not your average soup, but give it a chance, and it just might be your new favorite. Here's what one reviewer said: "My soup had a lovely peach color as I used red onion. Had some left-over fresh coconut milk so substituted it in for half of the water, delicious satisfying soup! My friend layered her portion over cooked quinoa and felt she had a complete meal."

Curried split-pea and potato soup
No fat is added (or needed!) in this split pea soup recipe, as there are lots of spices for flavor, including curry, oregano and garlic. Blending up the cooked potato adds a creaminess reminiscent of dairy, but without the extra fat, calories and cholesterol.

Gourmet grapefruit gazpacho
Gourmet grapefruit gazpacho is a gourmet vegetarian and vegan soup served cold. It's made from fresh citrus, tomatillos, purple onions, and spiced with Tabasco sauce. This soup is also incredibly low in calories, with less than 100 per serving. Enjoy!
