Should you cook meat for other people?  

 All of us vegetarians and vegans know what it feels like to show up to an event and have nothing there to eat, so we awkwardly push a carrot stick around on our plate, and hope no one notices (or sometimes, we hope everyone does notice!).

But what about meat-eaters? Should they expect you to serve hamburgers if you're hosting a vegetarian barbecueIs it unfair to expect meat-eaters to attend a meat-free party?

Pumpkin Seed Cole Slaw with Thai Peanut Dressing  

A crunchy high-protein cabbage and pumpkin seed cole slaw salad with a Thai peanut sauce-inspired dressing made of peanut butter, sesame oil and soy sauce. If you want an alternative to the traditional mayonnaise-based cole slaw recipes, this is a good one to try, and the added pumpkin seeds give it a nice protein boost, which is perfect for vegetarians and vegans.

Chickpea and Black Lentil Salad with Kale Italia  

I love greens such as kale, chard, and spinach, but I do like to temper them when eating them raw. A full kale or spinach salad is a bit much for me to stomach, which is why I love salad mixes which include these heavier greens along with lighter lettuces as well. The kale italia mix used in this recipe is a blend of baby kale (much softer and milder than regular kale), baby arugula and a bit of radicchio.
